Boiled Eggs 101

I was never a very big fan of boiled eggs. Still, every spring I'd buy a couple extra cartons to cook up and drop into our little cups of colored water. First, I would boil them for what seemed like an eternity, then have a great time turning them shades of pink and blue and green with the kids. The next day we would have plenty of hard boiled eggs to enjoy. Well, the word "enjoy" might have been a bit inaccurate. Of course, so was the word "eggs". But "hard boiled" seemed to fit them pretty well! My boiled eggs resembled rubber on the outside, and dried out rubber on the inside. Yummy!

Then.....I decided to see if there was a better way to boil an egg. It's amazing what information you can find if you just take the time to look for it. Now, we love boiled eggs. They show up as some added protein on our menu nearly every week. And they're so easy. When it comes time to make our colored egg creations for our celebration of spring, this is how I'll prepare our eggs. We really will "enjoy" these!

BOILED EGGS

Place eggs in pan. Cover with about two inches of hot tap water. Bring to a boil, uncovered, over high heat. Don't forget to watch them! After they come to a boil, immediately remove the pot from the burner and put the lid on the pan. Let them set in the hot water for 8 to 10 minutes, depending on your taste (I like mine just a bit soft). When the timer beeps, drain and put into a bowl of ice water. Peel when cooled.

I think I tend to cook mine too long. LOL After they come to a boil I set the timer for 10 minutes…continuing to boil!!! I’ll try it your way. :)
