Super Bowl of Caramel Corn

I grew up in a sports family. My dad was a high school coach, my brothers played ball, and my sister was a cheerleader. I cheered for a few years, but I have to admit that I didn’t seem to get the “sports gene.” My family tells a story of me taking my first steps towards the TV during a Lakers basketball game. I wonder if I was actually walking over there to change the channel? Just kidding! I really don’t mind watching sports, and I especially don’t mind that my boys my men enjoy spending the day watching ball games. I get it. And I do love Ohio State football. I’ve even done my share of yelling and jumping up and down during the Buck’s games. Right after I commented on how ugly our opponent’s uniforms were. That’s right, I’m all girl!

Even though I’m not a big sports fan myself, I’m a huge fan of my three guys who are. One way I can show them I care about what’s important to them is by creating a fun sports-watching experience. I usually plan easy meals and snacks for days when the big games will be on (which is every Saturday during the Buckeye’s football season). While the meals are often something simple like hot dogs, subs, or pizza, I think the real fun is in the snacks. One of my favorite treats to throw together is “Microwave Caramel Corn”. It’s quick, easy, and addictive. Does game day food get any better than that?

MICROWAVE CARAMEL CORN

1 cup brown sugar
1 stick butter
1/2 teaspoon salt
1/4 cup white corn syrup
3-4 quarts of popped popcorn
1/2 teaspoon baking soda

Combine all ingredients except soda and popcorn in a 2-quart microwave safe dish. Bring to a boil, then cook on full power for 2 minutes. Remove from microwave and stir in soda.

Put popped popcorn in a brown grocery bag and pour cooked syrup over popcorn. Close bag and shake. Cook in bag in the microwave for another 1-1/2 minutes on high power. Shake bag and cook for 1-1/2 more minutes. Pour into pan and allow to cool. Store in covered container (if it lasts that long!).
